Yields 2 dozen.
What you'll need:
- 2 cups butter
- 2 1/2 cups brown sugar
- 4 large eggs
- 2 tsp vanilla
- 4 tbsp maple syrup
- 2 1/2 cups whole wheat pastry flour
- 2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt
- 6 cups rolled oats
- 2 cups raisins
- Beat together butter and sugar until creamy
- Add eggs, vanilla, and maple syrup. Beat in well.
- Combine flour, baking soda, cinnamon and salt and add to the mixture, blending well.
- Stir in oats and raisins.
- Flatten the dough into cookie shapes before baking (cookie’s won’t bake properly if they are in balls).
- Bake for eight to ten minutes in preheated oven at 375 degrees F.
